At 33, Chef Ali Timouni takes the helm of the restaurants at La Tour d'Eole : La Table d’Eole & the beach club restaurant Le Chergui.

He trained under renowned Michelin-starred chefs in the palaces of Marrakech, including Philippe Jourdin at Royal Palm and Yannick Alleno at Royal Mansour.

Chef Timouni elevates exceptional raw materials, transforming them into flavors that are both distinctive, aromatic, delicate, and surprising, blending Moroccan and Asian notes with French gastronomy techniques.

His cuisine, meticulously thought out in terms of conception and texture, boldly explores the realm of creativity. His dishes showcase the products and producers of the Bay of Dakhla.

His commitment is evident in his preference for high-quality local products: octopus, lobster, oysters, shellfish, and fish, while minimizing their environmental impact.

More than just a dining destination, he aims to create a true culinary home. The restaurant's dining room, kitchen, and bar harmoniously coexist, driven by the same energy and enthusiasm. In 2023, the expert review from Le Figaro awarded La Table d’Éole a score of 9/10.
